I believe the fan reaches a point, with a stock belt arrangement, where the fan will just slip at a certain RPM.  Running a serp. set up really helps your fan's ability to explode under serious rpm, when the stock set up would slip.  cavitation isn't an issue, exploding fans, is.  If you can keep it together, the fan will keep pushing air if you can drive it.
