I made a new thing last night, just assembled what we had in refrig... similar to another spicy bit I make

chicken breast halves w/ ribs... simmer in water with onion for 40 min, save broth
let chicken cool 15 min or so
boil 8-10 tomatillos in water until they get soft (6-8 min) then drain and puree in processor with 1/4 c of cilantro
sautee 1 large onion, 1 red bell pepper in oil over high, in heavy cast iron pot (le Creuset) for 8 min
add 1tablspn of hot chili powder, 1 tblsp of cumin, 1 tsp of cayenne powder
add in 3-4 diced serrano peppers (hot!)
Add pureed tomatillos and 3/4c chicken broth
shred chicken from bones and add to chili mixture
add salt as needed
simmer 20 minutes

serve over hot rice cooked with chicken stock

watch out!

Chicken wings are real popular here in PA.  I'm not sure how regional their appeal is, though.  Do you guys out west or on other continents have much exposure?  aka "hot wings", "buffalo wings", etc.  There's a few places nearby that require a signed waiver to be served.  A cute gimmick IMO.

Personally I like spicy but nothing painful please.  A good balance of heat and flavor are good.   :o

I love those. I make them @ home too. One time I grabbed wrong measuring spoon for the red cayenne though... (drinking while cooking)  :o :o

Spicy food is a way of life. Most people that I know aren't into it. Long as my stomach remains iron status, keep the spicy nutrients flowin'. Case in point; Tapatio (or any other Mexican hot sauce) is kept at my work, home, and sometimes... my cars. It goes on eggs, popcorn, and just about every non-sweet food that I eat. Fresh jalapeño peppers are awesome in salads and on most Mexican food(s).

The Sriracha sauce is also tasty on a lotta foods outside of the Asian genre.

If I'm not sweating, it's not hot! ;D Tapatio is like ketchup to me. I had a bottle of Mad Dog 357 hot sauce a few years ago. I swear I hallucinated it was so damn hot. This shit is no joke.

If you ever get a chance stop in to WIGNUTS and order a "double dog dare" chicken wings. Just the smell will make your eyes water. Your first bite will feel like a hand granade just went off in your mouth. Great stuff!

I've been there.  Its gets so that anything you put in your mouth afterwards, unless it is an ice cube, still burns!

A funny story:

My dad is a "tough guy" when it comes to spicy stuff.  About 6 years ago my whole family plus my mom's brother's family goes to a nice local tavern that has good hot wings.  It is also one of these places that has a waiver for you to sign before serving the hottest they offer.  Of course, my dad and brother give it a go—sure enough they're significantly (painfully) spicy.

After a while my uncle's neighbor and his wife happen into the same establishment and are seated in the booth behind us.  Friendly people, we exchange enthhusiastic salutations, and my dad holds up the plate of killer wings and says "hey Joe, have a wing!"  Neighbor Joe happily obliges, sits down with his wife and takes a large bite of the deadly wing.  :o  The rest of us are now fearful for the unsuspecting fellow's life.  Except my dad, he's trying to catch his breath from laughing.  And he doesn't laugh often.

It does not take long before neighbor Joe is no longer at the booth with his wife, off to the bar or bathroom or somewhere to find liquid relief.  I assume out at the bar they were concerned about this fellow stumbing around clawing at his toungue.  Keep in mind this all happened before his waitress has even gotten to their table!

I guess you had to be there, but we now refer to it as the night my dad assaulted the neighbor with a chicken wing.

My Favorite is t get about 12 whole med to large jalapeño peppers remove stem cut in half the long way scrape out the seeds fill each one with cream cheese wrap with a strip of bacon bake on cookie sheet for 30 mins on 350 till the cream cheese sterts to get a tan color  Damm I can eat the whole Batch  ;D ;D
