Maybe can you try to heat it with an hair-dryer to see which line is the by pass and which is the line that goes to the radiator?

The way these thermostats works is like VW's own in the engine case. Cold oil is thick and will easily force its way over a spring loaded piston. I bet the piston/spring is hiding behind the little screw you see in the picture. So cold oil would go straight threw the section with the name on. And when hot the oil would come down the oil channel pointing towards us and go back in the other channel pointing towards us and exit to the right. To determine where the oil line should go in, you will have to look at the piston that does the blocking, it will have a design to make it easier for the oil to push it down on the side of incoming oil. It's probably tapered or something.
Good luck!
