I've used 1/2" aeroquip oil lines for years, but currently rebuilding the engine and looking at the oil hose, and fittings.
Is there any benefit to using AN-10 hoses for the full flow and cooler lines or stay with AN-8??

Stay with what's working ok for you, technically, bigger bore hose will have more pressure drop, but that's no problem on say a dry sump motor with front mounted coolers and tank, such an install would be fine with large bore hose were you need the large bore from the tank  to feed the pump pressure side with sufficient volume, such pumps typically have capacity to pump more oil anyway, if all your hardware is at the back near the motor, the smaller hose is fine with less pressure drop, though it can be possible for a high volume pump to blow out coolers, filters or hoses if they are too small, you obviously haven't had those sort of issues so your system is sound, if you ever up the oil pump size, up the hose bore at that time.
